Thick, fluffy pancakes - perfect for Sunday morning breakfast.


  • 2 cups of flour

  • .5 cup of sugar

  • 4 tsp baking powder

  • 1 tsp salt

  • 2 eggs

  • 2 cups of milk

  • 60g melted butter


  • 1.

    Combine dry ingredients.

  • 2.

    Whisk eggs, then add milk and melted butter.

  • 3.

    Add to dry ingredients and mix until just combined.

  • 4.

    Heat pan on a medium flame and grease with butter, then when just browning, add generous spoonful of batter. When air bubbles appear and it looks a bit like a crumpet, turn.

  • 5.

    Serve with fresh fruit and maple syrup.

  • 6.

    Makes about 12.
