When my son wanted an Ice Cream cake for his birthday, I thought how hard could it be to make one, so I thought about it , and came up with this idea and its been popular in my house ever since.
Line 18cm round cake tin with cling wrap overlapping the sides.
Spread evenly packet of Marshmellows into the cake tin.
Scoop Ice Cream onto Marshmellows spreading evenly and pressing down firmly, one flavour at at time. eg: chocolate, strawberry and then vanilla.
Place back into freezer for approx. 30 minutes.
Turn Ice Cream cake onto a plate, remove cling wrap and press Sprinkles around the outside of the cake.
Place into container suitable for freezer until ready to serve.
I attached silver cardboard stars to plastic drinking straws for decoration.
Alternative decorations could be Sparklers or ordinary Birthday candles
