A quick, filling and tasty vegetarian lunch or dinner option.


  • 2 medium potatoes

  • 1 egg

  • 2 tablespoons of plain flour

  • 200g white rice

  • cracked black pepper

  • salt

  • 1 tsp cajun spice mix

  • breadcrumbs to coat

  • Oil for frying

  • Sweet Chilli sauce (optional)


  • 1.

    Boil and drain the rice

  • 2.

    Grate the potatoes

  • 3.

    Combine all ingredients except breadcrumbs in a large bowl

  • 4.

    Shape into palm sized patties

  • 5.

    Coat with breadcrumbs

  • 6.

    Shallow fry in hot oil until cooked through

  • 7.

    Drain on paper towel

  • 8.

    Serve with sweet chilli sauce, and steamed vegies or salad


Great for using leftover rice from last nights dinner.
