Crumbed marinated Squid with mango salsa

Golden squid pieces marinated in chilli and coriander - crumbed and deep fried served with salad greens and mango salsa

Ingredients

  • 400g Squid - marinated in chilli and coriander

  • plain flour for dusting seasoned with salt and pepper

  • 1 large egg

  • tablespoon milk

  • 1/2 teaspoon seczuan pepper

  • 1 1/2 cups of breadcrumbs

  • 2 cups of sunflour oil for deep frying

  • 1 large mango

  • 1 red chilli - medium

  • 1 green chilli - large

  • juice of 1 lime

  • sprinke of sumac

  • baby cos leaves

  • snow pea sprouts

  • spanish onion

  • lemon and lime wedges

Method

  • 1.

    Cut squid into 3 cm wide strips and score with knife to form criss cross design

  • 2.

    Marinate squid in finely chopped coriander and chilli for 2 hours

  • 3.

    Coat squid in plain flour

  • 4.

    Dip in egg and milk wash

  • 5.

    Coat in breadcrumbs

  • 6.

    Place in fridge for 30 minutes

  • 7.

    Deep fry in deep frying at 170 degrees until golden in colour approx 3-5 minutes

  • 8.

    Mango salsa - cut mango into cubes and place in bowl

  • 9.

    Finely cut chilli's and add to mango

  • 10.

    Squeeze over juice of 1 lime and stir

  • 11.

    Place salad greens and spanish onion on serving plate

  • 12.

    Place cooked squid decoratively and garnish with mango salsa

  • 13.

    Sprinkle mango with a sprinkle of sumac

Notes

Serve immediately with a cold beer or australian sparking wine
