A pizza combining smokey roasted eggplant with rich blue cheese pizza.


  • 1 Medium Pizza Base (Bought or Home-made)

  • 100 ml Tomato Pesto (or Pizza Tomato Sauce)

  • 10 Slices Ham

  • 1 Large Roasted Eggplant

  • 150 g Mozzarella (Grated)

  • 120 g Blue Cheese (of choice, eg. Blue Castellofor a mild flavour or Gorgonzola if a stronger flavour is preferred)


  • 1.

    Fry or roast 1 cm slices of eggplant until soft

  • 2.

    Heat oven to 220 degrees C

  • 3.

    Roll pizza base and lay on pizza tray

  • 4.

    Spread pesto or sauce on pizza base

  • 5.

    Placeham slices over pizza, followed by eggplant slices

  • 6.

    Sprinkle grated mozzarella, followed by crumbled blue cheese

  • 7.

    Bake in oven for 15-20 minutes


Eggplant may be roasted in oven or fryed in oil on top of stove
