Pan fried then oven baked, the kids love them!
Heat oven to 200 degrees.
Peel sweet potato and slice into 2cm rounds.
Heat olive oil in a pan or baking dish on the stove. Finely chop the rosemary and saute on a medium heat for a minute or two. Place sweet potato pieces in the pan and cook each side until they start to get golden brown, stirring occasionally so they don't stick or burn.
Finish in the oven for around 10 minutes - they should be cooked through, but not too soft.
Season with sea salt, and serve straight away.
