Lime chicken


  • 1 teaspoon grated lime rind

  • 125ml (½ cup) cup lime juice

  • 60ml (¼ cup) oil

  • 2 tablespoons honey

  • 1 tablespoon soy sauce

  • 2 teaspoons grated green ginger

  • 1 clove garlic, crushed

  • 6 single chicken breasts

    Combine lime rind, lime juice, oil, honey, soy sauce, ginger and garlic in a large, shallow, non-metal dish. Add chicken breasts, marinate, covered, for several hours or refrigerate overnight, turning occasionally. Remove chicken from marinade, place in baking dish, bake at 180°C for about 40 minutes or until tender.
