Crisp whole-fried flounder with pickled vegetables and horseradish sauce

Ingredients

  • 1 Whole Flounder

  • 1 cup Semolina

  • 2 teaspoons Salt

  • 2 teaspoons Peppers

  • 2 egg whites

  • Mustard greens to garnish (baby shiso & mustard cress)

  • Horse radish sauce

  • 2 tablespoons grated fresh Horseradish

  • 0.5 cup mayonnaise

  • 1 tablespoon single Cream

  • Lemon Juice

Method

  • 1.

    Combine semolina and seasoning.

  • 2.

    Dip flounder in egg whites and then coat with semolina mix.

  • 3.

    Heat deep fryer to about 180°C, place in oil and cook for around 10 to 15 minutes, depending on the size of the fish.

  • Pickled vegetables (you can buy or make your own):

  • 1.

    Blanch vegetables, leaving them still crisp, then place in a jar with any mixture of vinegars, spices, herbs, salt, sugar and pepper depending on your taste.

  • Horse radish sauce:

  • 1.

    Mix all ingredients together.

  • To serve:

  • 1.

    Place fish on plate and garnish with mustard greens. Serve horseradish sauce and vegetables on the inside.
