Healthy Chicken Fingers

toddler friendly finger food for the whole family

Ingredients

  • 150g minced chicken

  • 100g pumpkin diced

  • 1 carrot chopped

  • 0.25 cup brocolli

  • 0.25 cup frozen peas

  • 0.75 cup bread crumbs

Method

  • 1.

    Preheat oven to 180C

  • 2.

    Steam pumpkin, carrot and brocolli until tender and mash

  • 3.

    Cook peas as per pack instructions

  • 4.

    Combine chicken, mashed vegetables, peas and 0.25 cup of bread crumbs in a large bowl

  • 5.

    Using your hands, mould into finger shapes and roll in remaining bread crumbs

  • 6.

    Grease a baking tray with cooking oil spray and bake in oven for 20 minutes

Notes

you can substitute the vegetables for your favourites
makes about 12
