A hearty lunch or dinner, suitable as starters or main which will satisfy the hungriest of cowboys, young and old.


  • 1 kg lean minced beef

  • 1 large onion diced finely

  • 3 sticks celery diced finely

  • 1/2 large red capsicum diced finely

  • 1 clove garlic crushed

  • 3/4 cup water

  • 2 large cans chopped tomatoes

  • 1 jar chunky medium taco sauce

  • 400g frozen corn kernels

  • 2 x 400g cans of mexican chilli beans

  • fresh coriander

  • salt and pepper

  • 1 tsp mild chilli paste


  • 1.

    In a heavy based Dutch oven, brown beef, onion and garlic. Drain any excess liquid. Add capsicum, celery water, taco sauce, chilli paste, beans and tomatoes. season with salt and pepper. Simmer for 60 minutes. Add frozen corn and simmer for a further 60 minutes until flavours are developed. Mix through with chopped coriander and garnish with sprigs of coriander before serving.
