Thai Noodle Salad

Delicious nutritious thai salad with noodles and omelette
Even the kids will love this one.

Ingredients

  • Omelettes:

  • oil for frying

  • 6 free range eggs

  • 1/4 cup milk

  • chives

  • toasted sesame seeds

  • salt

  • Salad ingredients:

  • 2 cups precooked, cold egg noodles

  • 1 cup sliced greens - eg. mizuna, lettuce, cabbage

  • few sliced spring onions

  • 1 cucumber thin sliced lengthways

  • 1 red capsicum thin sliced

  • 1 green capsicum thin sliced

  • 1 red chilli thinly sliced

  • 1 tablespoon on fresh lemon grass, finely chopped

  • 1 bunch fresh coriander, chopped

  • 2 tablespoons toasted sesame seeds

  • 1/4 cup chopped peanuts (optional)

  • Dressing:

  • 2 teaspoons sesame oil

  • 1/4 cup sweet chilli sauce

  • 1 teaspoon rice vinegar

Method

  • 1.

    Beat eggs, chives and sesame seeds

  • 2.

    Make 4 thin omelettes in frying pan. Let cool.

  • 3.

    Mix dressing ingredients together

  • 4.

    Mix salad ingredients together and add dressing.

  • 5.

    Roll up each omelette and slice into wheels about 2cm wide. Add 3 omelettes worth of wheels to salad. Mix.

  • 6.

    Add remaining omelette wheels to salad top.

  • 7.

    Enjoy.
