Summer Salad

A fresh salad with prawns and a twist.

Ingredients

  • 1kg cooked Prawns

  • Cos Lettuce

  • 12 Cherry Tomatoes

  • 1 Avocado

  • 1/2 Spanish Onion

  • Cucumber

  • 12 strawberries

  • Sliced Parmesan Cheese

  • Honey Mustard Dressing

Method

  • 1.

    Peel Prawns.

  • 2.

    Finely chop Lettuce.

  • 3.

    Halve Cherry Tomatoes.

  • 4.

    Peel and dice Avocado.

  • 5.

    Finely slice Spanish Onion.

  • 6.

    Halve Cucumber lengthwise and slice finely.

  • 7.

    Halve Strawberries.

  • 8.

    Divide all ingredients between four plates, sprinkle with Parmesan Cheese and Honey Mustard Dressing.
