Simply steamed pacific oysters with a savoury Asian-inspired ginger, chilli and soy dressing.
Place opened oysters on tray with crumpled foil under to hold the oysters in place.
Combine all ingredients together to make dressing.
Spoon dressing into oysters and place in pre-heated steamer oven.
Cook for two minutes or until the oyster is just warm.
Serve immediately, garnished with extra sliced shallots and coriander.
