Simply steamed pacific oysters with a savoury Asian-inspired ginger, chilli and soy dressing.


  • 8 Pacific Oysters opened

  • 1 teaspoon finely chopping Ginger

  • 2 tablespoons sliced Green shallots

  • 0.5 or 1 birds eye chilli chopped

  • 3 tablespoons rice wine vinegar

  • 2 tablespoons Soy sauce

  • Extra sliced green shallots & Coriander to garnish


  • 1.

    Place opened oysters on tray with crumpled foil under to hold the oysters in place.

  • 2.

    Combine all ingredients together to make dressing.

  • 3.

    Spoon dressing into oysters and place in pre-heated steamer oven.

  • 4.

    Cook for two minutes or until the oyster is just warm.

  • 5.

    Serve immediately, garnished with extra sliced shallots and coriander.
