Spinach and fetta triangles

Quick and tasty finger food for parties which can be kept low in fat content

Ingredients

  • 500 g of frozen spinach, thawed and drain well

  • 150 g of reduced fat fetta cheese

  • 150g of light ricotta cheese

  • 1 egg

  • 1 onion finely chopped

  • olive oil

  • 6 sheets of reduced fat frozen puff pastry

  • 1 extra beaten egg

Method

  • 1.

    Saute onions in olive oil until soft

  • 2.

    Add drained spinach, cheese and ricotta and egg and mix well

  • 3.

    Season with salt and pepper.

  • 4.

    Cut each sheet into 9 squares

  • 5.

    Add about a tablespoon of filling onto each square and fold diagonally to form a triangle.

  • 6.

    Use the edge of a fork to seal the sides of the triangle

  • 7.

    Place the triangles onto a baking tray and brush the upper surface of the triangles with beaten egg

  • 8.

    Bake each batch at 200 degrees for about 10-15 min until golden and puffed.
