A simple dish that I have been cooking since first moving out of home- quick and delicious!
Melt butter, add curry powder, chopped capsicum & onion
Saute for two to three minutes
Chop tomato and add to pan cooking for a further two minutes
Stir in the flour, salt & pepper cooking for one minute
Gradually add the water and milk and then crumbled stock cubes
Continue stirring until sauce boils and thickens
Reduce heat add the sugar and lemon juice and allow to simmer for around 20 minutes, stirring occasionally
Add the prawns near to serving just enough to heat through
Serve with steamed rice
