These cupcakes are quick and simple. Kids of all sizes love them.
Preheat oven to 180C
Sift dry ingredients together in a bowl and set aside
Stir the cocoa and hot water together in a jug to make a thick paste
Cream butter and sugar together in a food processor or electric beater
Add eggs one at a time to mixture and blend until all combined
Add buttermilk and vanilla to mixture and blend.
Add cocoa paste to mixture and blend until combined
Add dry indgredients to the batter until just combined.
Spoon mixture into prepared cupcake baking tray. Do not over fill .
Bake for 18-20 or until tops are set and a skewer comes out clean.
Cool on a wire rack
Bring cream to the boil and remove from heat
Add chocolate and stir until melted
Dip cooled cupcakes into Ganache,decorate as you wish and allow to set.
