This is a family recipe and my husbands favourite. The pastry is simple and forgiving.
Combine flour, butter and eggs in a food processor/beater until a smooth dough is formed.
Remove dough and divide in half.
Create a disc with each half, cover with plastic wrap and refridgerate for at least 1 hr.
When chilled roll each disc into a rectangle that will fit your baking tray.
Preheat oven to 220C
Line tray with 1 sheet of pastry and prick the pastry with a fork.
Scatter ham over base, covering all of the pastry.
Scatter the cheese over the ham layer
Pour beaten eggs over cheese and then sprinkle parmesan and season with black pepper.
Place 2nd pastry sheet on the top and seal edges
Brush top with beaten egg and sprinkle pine nuts on top
Bake for 20 -25 mins or until golden brown
Serve warm with a garden/green leaf salad
To reduce fat content use low fat mozzarella.
Remove ham and add tomatoes for a vegetarian version
