Using olive paste tapenade, I combine it with some chilli flakes to already prepared napoli sauce. It is a quick that can be made while your spaghetti is simmering in the pot - less than 20 minutes to prepare it is an easy "fast food" to prepare after work.

Ingredients

  • 250g spaghetti

  • Napoli sauce* (prepared and frozen earlier)

  • 1 tablespoon olive tapenade

  • 1 teaspoon chilli flakes

  • Handful grated parmesan cheese

  • * Napoli sauce (or plain marinara sauce as the Americans call it) is prepared in advanced and place in the fridge or freezer to use as a base for quick meals when you don't have the time to slave over an oven. It is made from: 2 tins peeled tomatoes which have been pureed, 5 sprigs of basil leaves, oil, 2 garlic cloves, crushed, salt and pepper to taste. Combine the ingredients and fill an empty tomato tin with water and simmer until a smooth, saucy consistency. Once cooled, place in container or freeze for later use.

Method

    Fill a pot with enough water to cook the spaghetti, add salt to the water. Once boiling place the spaghetti in and stir it. In a frypan, with a touch of oil, pour in your already prepared Napoli sauce, add the olive tapenade, and chilli flakes, slowly warm the mixture up and combine it as you wait for it to warm up. Once the spaghetti is almost al dente, drain it, and stir it into the sauce, once combined, toss in the parmesan so it melts into the spaghetti and sauce. Remove from heat and serve.

Notes

You can substitute the olive paste with chopped up olives that can be purchased in a jar. You can also add bacon to the sauce or even capers. Quick, easy, tasty and delicious.
