veal schnitzel with a nutty crust


  • 4 pieces veal steak,flattened

  • 60g grated parmesan

  • 100g pine nuts

  • 35g flour

  • 1 egg lighty beaten

  • 1 tbs oil

  • 20g butter

  • salt/pepper to taste


  • 1.

    Place pine nuts into food processor pulse to coarsely chop

  • 2.

    Transfer to shallow bowl pine nuts and grated parmesan season with salt/pepperto taste

  • 3.

    Put flour in a bowl also egg into another bowl

  • 4.

    Lightly dust veal into flour

  • 5.

    Than dip into egg than pine nut mixture

  • 6.

    Place on baking tray and chill for 15mins

  • 7.

    Heat oil and butter in fry pan untill butter is foaming

  • 8.

    Cook veal for 3min on both sides untill golden

  • 9.

    Drain on paper towel
