My mum's recipe she got from a chef at her work.Yummy ++. Keeps fresh for couple of days.


  • 1 large orange (boiled, see tip)

  • 185 grams melted butter

  • 3 eggs

  • 1 cup cater sugar

  • 1.5 cups self raising flour


  • 1.

    Chop and puree the whole orange in a food processor.

  • 2.

    Add the butter, eggs, sugar and flour. Mix well.

  • 3.

    Pour the mixture into a greased and lined 18cm cake pan.

  • 4.

    Bake in a moderate oven for approx 50 minutes.

  • 5.

    TIP ** Boil orange for 5 minutes in water to accentuate flavor.

For people who haven't made it: cook oranges with peel on, then chop the whole orange and put in food processor. (Yes peel still on) It won't rise much, make sure you use self raising flour, I used a smallish 7inch pan? It raised about 10cm.

Good basic recipe, nothing special but really easy and tastes good. Not dense, not ultra moist like orange drizzle cake. Nice fluffy

I made this with tangerines, cut down on the sugar and added vanilla ... ultra delicious!

It is perfect. I thought it will taste bitter but It didn't. We used to do it with orange juice but this is so much better
