One of the quickest lunches you can make. Have it on a sandwich or wrap, or on toast. Change it up depending on what you have in the fridge/pantry.
Chop the onion, celery & parsley very finely and mix all the ingredients together in a bowl.
Spoon over toast or bread, or as a sandwich filling. Feel free to add any other fillings you like.
For a more substantial mix, add some cooked rice and peas; this is delicious served in a wrap.
Omit the mayo and celery and add some olive oil instead, for a non-creamy version that is great with fresh tomato.
Mix tuna & onion with chilli, lime juice & fresh coriander for a Thai twist.
