Slow Roasted Tomatoes

A beautiful side dish or add to your salad

Ingredients

  • 8 Small Roma tomatoes halved

  • 1 tsp finely chopped rosemary

  • 1 tsp finely chopped thyme

  • Olive Oil

  • Sea Salt

  • Freshly cracked pepper

Method

  • 1.

    Preheat the oven to 120c

  • 2.

    Place the tomatoes on a pan with baking paper

  • 3.

    Sprinkle the rosemary and thyme over the tomatoes

  • 4.

    Sprinkle the salt and pepper

  • 5.

    Drizzle with olive oil

  • 6.

    Cook for 1hr-1 1/2 hr

  • 7.

    Let the tomatoes come to room temperature before serving
