Delicious moist, sweet banana bread with juicy chocolate flavour

Ingredients

  • 2 1/2 cups plain flour

  • 130g unsalted butter softened

  • 5 bananas ripe (large) and mashed

  • 200 g dark chocolate chips

  • 2 1/2 teaspoons baking powder

  • 1 cup caster sugar

  • 2 eggs

  • 1 generous teaspoon vanilla extract

Method

  • 1.

    Mix all of the wet ingredients in a bowl. Add the chocolate chips. Sift the flour and baking powder in a separate (large) bowl. Add the wet ingredients to the dry ingredients and stir to combine. Don't overmix or it will become tough. Cook in a 180 degree oven for 1 hour to 1 hour 15 mins. Test the bread with a skewer to see if it is cooked. A loaf tin is best for this recipe however you could also use muffin cases for individual ones.
