Easy risotto


  • 400 grams kumara cut into small pieces and roasted in the oven

  • 6 rashes short cut bacon

  • 1 white onion

  • oil

  • 2 cups aborio rice

  • .5 cup white wine

  • 4 cups chicken stock

  • .5 cup parmesan cheese

  • pine nuts

  • basil

  • natural yoghurt to serve


  • 1.

    Cook kumara in the oven until browned

  • 2.

    Sautee onion and bacon

  • 3.

    Add Arborio rice and stir 2 mins

  • 4.

    Add white wine and stir until absorbed

  • 5.

    * Add chicken stock one cup at a time stirring until absorbed

  • 6.

    When rice is cooked removed from heat and add parmesan cheese, pine nuts and basil.

  • 7.

    Serve topped with pine nuts and extra parmesan cheese
