Its a mild prawn and coconut curry.

Ingredients

  • 1 tablespoon olive oil.

  • 2 tablespoons red curry paste.

  • 1 can coconut milk or coconut flavoured condensed milk.

  • 1 can condensed pumpkin soup.

  • 500g prawns.

  • 250g bean sprouts.

  • 250g snow peas.

Method

  • 1.

    Heat a wok and add the oil.

  • 2.

    When hot, add the red curry paste (use more or less depending on how hot you like your curry).

  • 3.

    Fry for 1 minute.

  • 4.

    Add pumpkin soup and coconut milk.

  • 5.

    Heat until boiling, then turn down to simmer.

  • 6.

    Add peeled prawns, bean sprouts and snow peas.

  • 7.

    Simmer until prawns and vegetables are cooked.

  • 8.

    Serve with boiled rice.

Notes

Instead or prawns you can use chicken and various other vegetables. To keep it low fat, use coconut flavoured condensed milk instead of coconut milk. Same flavour, but less fat.
