So easy and low fat too. Great for vegetarians. All ingredients from your local supermarket.


  • 2 tablespoons extra virgin olive oil

  • 2 medium onions

  • 2 cloves(or teaspoons) garlic

  • 2 packets frozen spinach

  • 500gms low fat ricotta cheese

  • 2 jars pasta sauce

  • Lasagne sheets

  • Low fat tasty cheese

  • salt and pepper


  • 1.

    Defrost spinach and squeeze out ALL excess liquid

  • 2.

    Heat oil in pan and fry off onion and garlic intil golden

  • 3.

    Add spinach and fry gently for further 2 mins

  • 4.

    Remove from heat and cool slightly

  • 5.

    Stir through ricotta cheese

  • 6.

    Season with salt and pepper

  • 7.

    Spray large (24 x 34cm) rectaguler ovenproof dish with spray oil.Line base with lasagne sheets. Evenly spoon over one third of spinach/ricotta mixture then spread with two thirds of pasta sauce from jar.Put down another layer of lasagne sheets then use two thirds of second jar of pasta sauce.Repeat using last of ricotta mixture and last of both jars of pasta sauce.Cover with layer of lasagne sheets. Top with tasty cheese.Cover with foil and cook for 45mins,then remove foil and continue to cook 15mins more until golden brown


"Latina" lasagne sheets are best
Gluten free lasagne sheets can be substituted
Low fat tasty cheese will not brown as well as regular tasty cheese
Spray underside of foil to stop it sticking to melting cheese
Ricotta cheese is cheaper bought from deli section rather than pre-packaged
Freezes very well - cut into squares,wrap in clingwrap
