Mushroom Soup

Simply delicious family recipe for mushroom soup.

Ingredients

  • 570 ml of vegetable stock

  • 500 g of mushrooms, sliced

  • 55 g of unsalted butter

  • 2 x tbsp of olive oil

  • 2 x garlic cloves, pealed and finely sliced

  • 150 ml of cream

  • Salt and pepper

Method

  • 1.

    Heat the oil in a pan and fry the garlic, mushrooms and onion for a few minutes to soften

  • 2.

    Pour the vegetable stock into the pan, bring to the boil, then reduce the heat and simmer gently for 8-10 minutes or until the mushrooms are tender.

  • 3.

    Stir in the cream and then ladle the soup into a food processor.

  • 4.

    Blend until smooth and return to the pan; or use a hand-held blender.

  • 5.

    Season to taste and reheat gently.

  • 6.

    Ladle the soup into soup bowls and serve.

Notes

Sprinkle with herbs before serving (parsley and or tarragon are delicious).
