Penne pasta with ground beef, pesto, tomato with yummy toasted pine nuts.


  • 400 grams lean minced beef or pork/veal combo

  • 1 cup uncooked penne pasta

  • 1 x can tomatoes (400g tin)

  • 4 generous table spoons of Basil PESTO

  • 1 medium chopped red capsicum

  • fresh parmesean

  • hand full of toasted pine nuts

  • 1 x tub light sour cream

  • lemon

  • fresh basil

  • fresh rocket

  • salt & white pepper to taste

  • olive oil


  • 1.

    Lightly toast the pine nuts in a fry pan - set aside.

  • 2.

    Add red capsicum to the pan and lightly fry - set aside

  • 3.

    At this time start cooking your pasta as per the packet instructions (microwave 13mins)

  • 4.

    Lightly oil a pan with olive oil of your choice

  • 5.

    Add the minced meat & cook through (drain off any excess fat)

  • 6.

    Add pesto

  • 7.

    Add tomatoes

  • 8.

    Season to taste with salt pepper & also more pesto if you like

  • 9.

    Add 4 tbl spoons fresh parmasean

  • 10.

    Add as much light sour cream as you like - I like it really creamy

  • 11.

    Then toss in the pine nuts, capsicum & fresh rocket (will nicely wilt with the heat)

  • 12.

    Pour over penne pasta,

  • 13.

    Add fresh basil

  • 14.

    Season with a squeeze of lemon juice before serving


if you like your food spicy add some fresh chilli during cooking
