Penne pasta with ground beef, pesto, tomato with yummy toasted pine nuts.
Lightly toast the pine nuts in a fry pan - set aside.
Add red capsicum to the pan and lightly fry - set aside
At this time start cooking your pasta as per the packet instructions (microwave 13mins)
Lightly oil a pan with olive oil of your choice
Add the minced meat & cook through (drain off any excess fat)
Season to taste with salt pepper & also more pesto if you like
Add 4 tbl spoons fresh parmasean
Add as much light sour cream as you like - I like it really creamy
Then toss in the pine nuts, capsicum & fresh rocket (will nicely wilt with the heat)
Pour over penne pasta,
Add fresh basil
Season with a squeeze of lemon juice before serving
