For those that are health conscious this is a great tasty recipe!!


  • Pita bread for bases (or can use other base equivalent)

  • Pizza sauce or tomato paste

  • Onion (diced)

  • Ham (diced)

  • Pineapple (sliced into small pieces and all liquid drained)

  • Mushrooms (diced)

  • Capsicum (diced)

  • Grated cheese (I generally use low fat cheese but can use whatever is your preference)

  • Salt and Pepper for taste

  • Chopped Basil

  • An egg

  • You can use any other ingredients as variations ie; salami, prawns etc.

  • For vegetatian variation just leave out the ingredients that you don't eat!!

  • For low fat variation only use a little cheese!!

    Use the pita bread as a base and spread lightly with the pizza sauce. Sprinkle some of the onion, then the ham, then capsicum, pineapple and mushroom making sure that you spread the ingredients to the edges. Then sprinkle with the cheese - also to the edges. Use as much or as little of any of the ingredients as you wish and use salt and pepper and basil to taste. Then place the pizza on a baking tray covered with foil. Crack an egg into a mug and lightly beat. Slowly pour the egg over the middle of the pizza being careful not to spill it over the edges. Then cook for approx 15 minutes or until the cheese is melted.


Make sure that you don't put the pineapple on the pizza wet or else it will become too soggy. Also too much mushroom will also have the same effect. If you want the pizza crispy on the bottom then take pizza off the baking tray five minutes before you are due to take it out of the oven.
