Delicious light quinoa salad with basil garlic dressing.


  • 1 x 250 g packet of Quinoa

  • 1x Advocado

  • 0.5 cup of chickpeas

  • 0.25 cup of Pinenuts

  • 3 cups of Spinich leaves

  • 1 x Roma or Cherry tomatos

  • 1x regular sized tomato

  • 0.5 cup of Basil

  • 1x clove of Garlic

  • 1.5 tablespoons of Olive oil

  • Salt and pepper to taste

    Rinse the quinoa well, add to boiling water and cook until soft

  • 3.

    Add chopped avocado, pinenuts, spinich leaves, chickpeas, roma or cherry tomatos to a salad bowl and mix.

  • 4.

    Add cooked quinoa to the salad bowl.

  • 5.

    Finely chop basil and garlic. Add juice from one regular sized tomato and oil. Salt and pepper to taste.


Add the dressing while the quinoa is warm so the basil and garlic dressing will be fused all throughout the salad.
