I tried something like this in a cafe once and loved it, the cafe shut down so i had to go home and work out what was in it so that i could keep this beautiful dish on the menu!!
Cook enough fettucine for 4 people according to packet instructions.
Add some olive oil to a large fry pan, and brown the chicken.
Add pesto and stir well to coat chicken then add other capsicums, mushrooms and sundried tomatoes and stir until capsicums are tender.
Drain fettucine and toss through the sauce.
Serve with parmesan cheese and shredded basil.
Add more pesto depending on your tastes- I like it to get a bit crunchy on the bottom of the pan.
Sauce should "glisten"- there should be enough oil in the pesto and the sundried tomatoes for this but if it appears dry, give it an extra glug of olive oil
