I've made this for cocktail parties, and morning tea functions. Everyone wants the recipe because they are "the best chicken sandwiches ever."


  • 2 Loaves of white bread sliced lengthways. (ask the bakery to do this)

  • Loaf of Brown bread sliced lengthways.

  • Lurpak Danish butter-lightly salted

  • 3 cups of finely shredded cooked chicken breast

  • 4 spring oinions finely chopped

  • 1 stick celery finely chopped

  • .5 cup whole egg mayonnaise

  • .33 cup light sour cream


  • 1.

    Butter the bread slices.

  • 2.

    Combine chicken with chopped spring onion, chopped celery, sour cream and mayonnaise.

  • 3.

    Spread onto slices of bread, remove crusts and cut into finger sandwiches.


Make the chicken filling the night before to allow flavours to meld.
