I wanted an easy mousse recipe with not much effort - and not much cream.
In a pan, mix egg yolks with water, add jelly crystals and stir over a low heat until dissolved.
Stir in lemon juice.
Put aside in fridge until starting to set.
Meanwhile,beat cream until thick.
Beat egg whites until peaks form,add sugar and continue beating until disolved
Fold jelly mixture into cream.
Fold lemon and cream mixture into beaten egg whites.
Pour into four individual dessert glasses and chill until set.
Garnish with frosted grapes, or slices of kiwi fruit.
May be served with extra cream.
