Thanx to Neil Perry I now have a fresh, different salad to enjoy on a hot summers day. Is great as a main meal without being too heavy.

Ingredients

  • 500g Prawns deveined and peeled

  • 3 bunches green asparagus trimmed

  • Zest of 2 lemons

  • 2 tablespoons salty baby capers soaked and drained

  • 1 cup Mixed marinated olives

  • 2 Lemons juiced

  • Extra Virgin Olive Oil infused with garlic and chilli

  • 8 grape tomatoes - halved or quartered

  • 2 slices Ciabatta or vienna bread

  • freshly ground sea salt

  • freshly ground pepper

Method

  • 1.

    Blanch the asparagus in plenty of boiling salted water, drain and refresh.

  • 2.

    Heat the BBQ to medium-high and grill the prawns till golden.

  • 3.

    Mix lemon zest, lemon juice, oil, and seasoning.

  • 4.

    In large bowl mix asparagus, olives, capers, tomatoes and dressing.

  • 5.

    Lightly toast bread in a little bit of oil in a pan and lightly toast

  • 6.

    Cut or break bread into smaller pieces and add bread and prawns to bowl with other ingredients and serve.

Notes

You could also add crumbled fetta cheese to this recipe and leave out the bread or have both!
Am going to try this base with tuna and also calamari as alternatives
