Pies that anyone can make that taste delicious.


  • 300g chicken breast, cut into bite size pieces.

  • 3 cups sliced mushrooms

  • 1/2 finely chopped onion

  • 2 cloves crushed garlic

  • 1 tblspn white wine

  • 1/4 cup cream

  • 1 cup chicken stock

  • Fresh ground pepper

  • 2 tspns cornflour, dissolved in water.

  • Frozen puff pastry sheets, thawed.

  • Little bit of milk

    Preheat oven to 180 degrees C

  • 2.

    In a frypan, cook onion in a little oil until soft and browned. Add garlic, cook for another minute then add white wine. Cook for a further minute.

  • 3.

    Add chicken and cook until no more pink can be seen.

  • 4.

    Add mushrooms and cook for 5 minutes.

  • 5.

    Add chicken stock and cream and let it reduce down, making sure there is still some liquid remaining. If not add a little extra chicken stock or cream. this will take 5 - 10 minutes on high heat.

  • 6.

    Season with pepper.

  • 7.

    Add cornflour and stir until thick.

  • 8.

    Cut pastry sheets in half, add 3 - 4 tablespoons of chicken mixture to one half of cut pastry sheet. Fold other half of pastry over chicken mix, turn the edges of bottom sides up and over the edges of top half. Press the 3 sides with a fork to seal.

  • 9.

    Place on a baking tray lined with baking paper and brush pastry with a little milk. Bake for 10 - 15 minutes.


Can add vegetables of your choice for chicken and vegetable pies. Can also make beef pies, just replace the chicken with beef ( cheap cuts like chuck steak or skirt steak are best) , replace the white wine with red wine, the chicken stock with beef stock and omit the cream. Cook in a pot for about 2 hours before making into pies.
