  • 1 Tablespoon Butter/cooking spray

  • 4 Bacon rashers, finely chopped/8 shortcut rashers,finely chopped

  • 500g Ricotta Cheese

  • 2 eggs

  • .75 cup mozzarella Cheese

  • .25 cup grated Parmesan Cheese

  • 4 sprigs Parsley


  • 1.

    Cook bacon for 3 minutes over medium heat in fry pan

  • 2.

    Combine all ingredients in food processor

  • 3.

    Spoon mixture into greased muffin tin

  • 4.

    Bake at 180c for 30 minutes
