A light dressing that provides a nice kick to oysters with a chilli strands and fish roe.


  • light soy sauce (half of a small rice bowl)

  • 1/2 lemon

  • 1 chilli julienne

  • 1 tsp sugar

  • 1 tbs sweet mirin

  • 1 strand spring onion julienne

  • 1 container of japanese fish roe


  • 1.

    Combine soy, lemon and mirin into bowl

  • 2.

    Add sugar and dissolve

  • 3.

    Taste to make sure of zesty flavour with slight sweetness

  • 4.

    Place chilli and spring onion strands as well as fish roe on oysters

  • 5.

    Drizzle dressing on oysters

  • 6.
