A quick easy curry thats really good for you
I add sambal oelek at the end,this curry goes great with thick bread or rolls.

Ingredients

  • 2 cups Green Lentils (wash lentils before cooking)

  • 2-3 cups hot water (See Cooking Notes)

  • 1 cup crushed tomatoes

  • 1 tablespoon oil

  • 1 onion finely chopped

  • ½ teaspoon Seven Seas crushed ginger

  • ½ teaspoon Seven Seas crushed garlic

  • 1 teaspoon Turmeric

  • 1 teaspoon Coriander ground

  • ½ teaspoon cumin seeds

  • 1 teaspoon Garam Masala

  • Sambal Oelek 1 Tbs

  • Salt to taste

  • 1 fresh green chilli with stem chopped off OR ¼ teaspoon of chilli powder & ½ Green capsicum sliced (optional)

Method

  • 1.

    1. Put lentils in a saucepan with water, crushed tomatoes, salt to taste and garam Masala - bring to boil and cover. (If you wish to add capsicum and or whole green chilli you may do so at this point). Reduce heat to low and cook for required amount of time.

  • 2.

    2. In another saucepan fry sliced onions till golden, add ginger and garlic and fry for about 2 minutes, then add turmeric, coriander ground and cumin ground (and chillies if you wish), fry on low heat for approximately 2-3 minutes stirring constantly.

  • 3.

    3. Add this and the Sambal Oelek to the cooked lentils and stir through and serve.

Cooking Notes
You may choose to soak lentils for 2-4 hours, then cook for about 20 minutes approximately in 2 cups of water OR Cook lentils without soaking for 45- 50 minutes with approximately 3 cups of water Lentils should be cooked so they are whole and soft
The amount of water needed is an indication only, and varies according to batch of lentils, heat used and how tightly lid fits saucepan etc. It is advisable therefore to check while cooking and add more water if required

I like the sound of this recipe. It seems to be very simple to prepare and cook. I will try this one.
