A quiche with a difference, I have been making this for over 20 years and it always delights. Serve hot or cold.

Ingredients

  • Short Crust Pastry

  • 2 tablespoons butter

  • 60g chopped salami

  • 2 onions, finely sliced

  • 1/2 cup finely sliced zucchini

  • 1 crisp apple, peeled and diced

  • 3 eggs

  • 1 1/4 cups milk

  • 1/2 cup grated parmesan cheese

  • freshly ground black pepper

Method

  • 1.

    Roll out pastry and line the base and sides of a 23 centimetre quiche dish.

  • 2.

    In a large frying pan melt the butter and add the salami and onions. Cook until the onions are soft and transparent. Stir in the zucchini and apple. Spoon into the bottom of the pastry case.

  • 3.

    Beat together the eggs, milk and cheese. Add pepper to taste. Pour over the vegetables. Put the quiche on a baking tray and bake in the oven at 200 degrees for 10 minutes. Reduce the heat to 180 degreess and bake until it is firm in the centre, about 45 minutes.
