Traditional Italian Style -
Place spaghetti in boiling water & heat olive oil in a large wok or frypan. When oil starts to smoke, add the prawns, scallops & garlic, seasoning with a liberal amount of ground black pepper.
When garlic begins to brown, add mussels & when they begin to open, add the squid. The juice from the mussels & other seafood will combine with the oil to make the sauce for the dish. From the moment the seafood is added to the oil - until this stage - should only be about 2-3 mins. using a powerful stove top. (Otherwise use two pans, diving ingredients between the two.
Drain pasta well & addit to pan. While mixing it through the seafood, add oysters, parsley & salt to taste.
If liked, stir through the cream, & sprinkle with parmesan to serve.
I keep bags of good quality seafood in the freezer and capture the juices whilst thawing to use in the dish.
