  • 400g ripe tomatoes

  • 2 small cloves of garlic

  • 1 tablespoon of fresh basil

  • 2 teaspoons olive oil

  • 1/4 small red onion

  • 1 teaspoon vegatable stock powder

  • 1 french bread stick


  • 1.

    Finely chop garlic basil and red onion

  • 2.

    Score bottom of tomatoes with a small cross

  • 3.

    Place in saucepan which is 3/4 filled with boiling water for 1 minute

  • 4.

    Remove and cool under cold water and remove skin.

  • 5.

    Cut tomatoe in half then squeeze as much juice out as possible and discard.

  • 6.

    Chop the flesh and place into mixing bowl and add all the other ingredients and

  • 7.

    Combine well.

  • 8.

    Cut breadsticks into desired lengths be it in a sub form or small bite sizes depending on if its for pre dinner snack or a lunch treat.

  • 9.

    Place in Grill and toast, remove and place ingredients from bowl on top

  • 10.

    With Salt and Pepper to taste and either place back under the grill to

  • 11.

    Warm or serve cold either way is okay its just about how you would like it

  • 12.

    To be served.
