A very easy to make recipe for entertaining a crowd
Drain tinned salmon, and take away the main back bones
Add all ingredients except pepper to a large mixing bowl and mash well with a fork
Add pepper to taste and mix in well
Serve in a small bowl surrounded by corn chips, cut slices of carrot or celery, or small pieces of pita bread

You can use pink salmon if you wish
I like to use light cream cheese (ie the 80% lighter one), however I find that the new 'extra light' cream cheese tastes like cardboard, so go the 'light' or the 'full strength' cream cheese but definitely stay away from the extra light!!
