A refreshing snack for a party ie; christmas - can be made a few hours ahead to be kept chilled.


  • 2/3 packets Fresh Salmon sliced thinly - Keep Chilled till use

  • Fresh Philly - 250g

  • Fresh Dill

  • tsp Freshly grated lemon zest - chopped finely

  • Course salt

  • pepper

  • pinch of chilli (if wanted) I use it for colour.

  • Fresh parsley

  • squeeze lemon juice

  • Rocket

    Medium size bowl

  • 2.


  • 3.

    Flat bladed knife - large width

  • 4.

    Chopping boards or 2 Separate surfaces for rolling rolls.

  • 5.

    Grate zest of lemon and chop finely

  • 6.

    Chop dill and parsley finely

  • 7.

    Add Philly cheese to bowl, chopped herbs, pinch of chilli, salt and pepper, squeeze fresh lemon, zest and combine with knife.

  • 8.

    Chill for 10 minutes.

  • 9.

    With a gentle hand, take salmon and lay flat, at one end place a small teaspoon of mixture and roll up salmon flake.

  • 10.

    Lay rolls on prepared rocket leaves on tray, cover and chill in refrigerator until ready to serve.

  • 11.

    When ready to serve, garnish with spared lemon juice, a sprig of parsley and dill. A slice of curled lemon on top. Can place a toothpick in if desired.


This recipe can be for a few or alot of people, just increase quantities if more are required.
