  • 1 cup all purpose flour sifted

  • 1.5 cups corn meal

  • 1 teaspoon baking soda

  • 1 teaspoon baking powder

  • 2 teaspoons salt

  • .25 cup vegetable oil

  • 2 eggs beaten

  • 2 cups sour milk or buttermilk


  • 1.

    Sift dry ingredients together

  • 2.

    Mix in vegetable oil until mixture is coarse like meal

  • 3.

    Combine eggs and milk

  • 4.

    Stir in flour and cornmeal mixture

  • 5.

    Bake in greased muffin pans or square cake tin at 200C for 25 to 30 minutes

  • 6.

    Makes about 1.5 dozen muffins
