Very simple, tasty and usually gets good reviews from my guests


  • 1 small chicken per serve

  • Apricot nectar (fresh or canned)

  • Seasonings to taste

  • Side: Selection of baking vegetables cut up into small pieces.

  • Seasoned with herbs of your choice.

    Flatten small chickens and place in shallow baking dish. Cover with apricot nectar and seasoning to taste and leave in fridge for at least 6 hours. Remove from fridge, bake on moderate heat until chickens are cooked. Leave chickens in apricot nectar while cooking. Serve with seasoned baked vegetables.
