I have made a lot of potato and egg salad recipes and I have taken something I like out of the other recipes and now use them in this one.

Ingredients

  • 8 Desiree potatoes, washed, diced not peeled, boiled but not too soft

  • 6 Hard boiled eggs, diced

  • 1 Cup chopped parsley

  • 1/2 cup diced red onion

  • 6 rashes diced fried bacon

  • 1 cup whole egg mayonnaise, can add more

  • Add cream as desired, I use about 1/2 cup

  • Salt and Pepper to taste

Method

  • 1.

    Cool all cooked ingredients, mix all together in large bowl, chill and eat
