Quick Quiche style- easy dinner, lunch or snack great hot, warm or cold.

Ingredients

  • 1 Puff Pastry Sheet

  • 3 Chopped bacon rashers

  • 3 Chopped Spring Onions

  • 3/4 cup grated Tasty Cheese

  • 300ml Sour Cream ( not lite)

  • 3 Eggs

  • Salt and Pepper to taste

  • Paprika

Method

  • 1.

    -Pre-heat oven to 180 degrees Celsius

  • 2.

    -Cook bacon until lightly golden

  • 3.

    -Place the Puff pastry sheet into a pie plate( lightly greased or line with baking paper, both work a treat), depending on your style you can trim it to fit or leave the corners to hang over for a rustic touch.

  • 4.

    -Sprinkle bacon, spring onion and cheese over pastry base evenly.

  • 5.

    -In a bowl, mix the sour cream and eggs with salt and pepper until combined. Pour over the pie base filling evenly.

  • 6.

    -Lightly sprinkle with paprika.

  • 7.

    -Bake in oven for approx 20 mins or until puffed and just set in middle.

  • 8.

    -Allow to cool slightly before serving or is just as delicious cold.

Notes

-Can just as easily been prepared same way in muffin trays makes approx 18 and are a great school lunch treat or afternoon snack or quick breaky on the go- either hot or cold.
-Can be stored in the fridge for up to 2 days if it lasts that long.
-Filling can be varied but keep the ratio of egg and sour cream the same for a set filling, alternatives include onion, ham and topped with thin slices of tomato or whatever you desire.
