Quick, cheap and easy family friendly pasta dish using mince, pasta and tomato paste. This recipe comes from my mother and was something she always made for "take a plate" parties and was the only one my brothers and I would eat. We also love this cold the next day. I have only slightly adapted it by adding peas which my children love.

Ingredients

  • 250g macaroni

  • 250g beef mince

  • 2 rashes of bacon, chopped

  • 1 onion, roughly chopped

  • 1/2 green capsicum, chopped

  • 25g butter

  • 1 teaspoom curry powder

  • 2 tablespoons tomato paste

  • 1/2 cup chicken stock

  • Salt and pepper to taste

  • 1/2 cup frozen peas

Method

  • 1.

    Boil the macaroni until tender, drain.

  • 2.

    Fry the bacon until crisp then add the butter, onion and capsicum. Fry un til the onion softens.

  • 3.

    Add the mince and fry until the mince is browned, breaking up any lumps.

  • 4.

    Add the curry powder and fry until fragrant, about 1 minute.

  • 5.

    Add the tomato paste, stock and salt and pepper, mix well.

  • 6.

    Return the macaroni and add the peas.

  • 7.

    Mix well and simmer on low heat until the peas are cooked.

  • 8.

    Check seasoning, serve and enjoy.

This can be made ahead and also freezes well. Amounts here easily feed 2 adults and 2 children however I often make more and freeze in portions for easy defrosting.

hmmm...sounds delicious and easy!!..i'll give it a try!!.. =))
by the way can i use tomato sauce instead of tomato paste?..because tomato paste seems a bit more sour to me...
