Chicken Schnitzel

Chicken coated in a crispy bread crumbs. Great with a salad or in a sandwich.


  • Bread crumbs - 3 cups

  • Thinly sliced chicken breast - 400 g

  • Eggs - 2

  • Parmesan cheese - .5 cup

  • Olive Oil - for shallow frying

  • Basil - hand full

  • Salt - to taste


  • 1.

    Place the eggs, basil and cheese in a bowl and whisk until light and frothy

  • 2.

    Pour the bread crumbs on to a flat dish

  • 3.

    Coat the chicken breast in the egg, basil & cheese mixture and then transfer to the bread crumbs

  • 4.

    Coat the chicken with bread crumbs and firmly push the crumbs down on to the chicken using your hand

  • 5.

    Place the olive in a frying pan and heat

  • 6.

    Once the oil is hot, place the chicken in the hot plate and fry each side until golden brown

  • 7.

    Place the chicken on a plate covered with an absorbent towel to absorb the excess olive oil

  • 8.

    Season with salt.
