This salad is perfect as a side for a lamb dish or by itself. It is light and healthy.

Ingredients

  • Couscous - 200 g

  • Mint - 1 handful

  • Parsley - 1 handful

  • Coriander - 1 handful

  • Chick peas - 1 x 400 g tin (drained & washed)

  • Cherry tomatoes - 200 g

  • Butter - 1 tbs

  • Red onion - 1

  • Lemon - 1

  • Salt & pepper - to taste

  • Olive oil - 2 tbs

  • Oregano - 1 tbs

Method

  • 1.

    Pre-heat oven to 180 degrees celsius

  • 2.

    In a baking tray place cherry tomatoes, olive oil, salt, pepper and oregano. Mix well and place in the oven for 15 mins

  • 3.

    In a bowl place butter and couscous

  • 4.

    Cover with boiling water (about 1.5 cups)

  • 5.

    Leave couscous to swell up for approx 15 mins

  • 6.

    Finely dice red onion

  • 7.

    Chop herbs

  • 8.

    Once couscous is ready, combine roast tomatoes, chopped herbs, juice of lemon, red onion and chick peas

  • 9.

    Season with salt & pepper to taste

Notes

To convert this from a side to a meal, simply add tuna!
